Ingredients Serving: 6

  1. For bedmi puri dough:
  2. 1 medium bowl urad dal soaked for 2 hrs
  3. 1 large bowl wheat flour
  4. 3 green chilies
  5. 6-7 black peppercorns
  6. 3-4 tbsp oil
  7. 1 tbsp kashmiri red chili powder
  8. 1 tbsp coriander powder
  9. 1&1/2 tbsp roasted fennel seeds powder
  10. 1 tsp Nigella seeds
  11. 1 tsp carrom seeds
  12. 3/4 tbsp garam masala
  13. 1/4 tbsp cumin powder
  14. 1/2 of 1/4 tsp aesofotida
  15. Salt to taste
  16. For stuffing:
  17. 4 medium potatoes boiled
  18. 1 medium bowl green peas boiled
  19. 1 medium bowl green corainder leaves
  20. 7-8 green chilies
  21. 10-12 Garlic Cloves
  22. 1/2 tsp turmeric powder
  23. 1/2 tsp garam masala
  24. 1 tsp mustard seeds
  25. 5-6 tbsp oil
  26. Salt to taste
  27. 1 tbsp dry mango powder
  28. 1 TBSP KASURI METHI
  29. Oil to fry the puris and kachori

Instructions

  1. First grind soaked urad dal, green chilies and black pepper corns with water as required.
  2. Take the urad dal paste in a mixing bowl, add the wheat flour, oil, salt and dry spices.mix it well till all the ingredients are combined well.now add water to make a stiff and smooth dough.
  3. For the stuffing, make the paste of coriander leaves, green chilies, garlic. Mash the potatoes and green peas and keep it aside.
  4. start to heat up a kadai add the oil and then the mustard seeds.let it splutters. then add the paste and cook for around 1 min on a medium heat.keep stirring regularly.
  5. Add the turmeric powder, garam masala and mix it well. add the mashed potatoes and green peas.cook it on a low to medium heat for 2-4 mins.stir it regularly.
  6. Add salt to taste, dry mango powder and kasuri methi.mix it well.
  7. Now to make the stuffing take a small dough ball.roll it using s rolling pin into a puri of 6-7 inches in diameter.place some stuffing into the center.bring the ends together into the center and seal it.
  8. Flatten it up in between the palms in this way make as many kachoris.
  9. Now fry these kachoris, in the heated oil on medium to low heat till golden brown.
  10. Serve the delicious kachoris with your favourite chutney.
  11. U can also make plain puris out of the dough and serve with potato curry.this too is very delicious.
