Ingredients Serving: 4

  1. Bendi 1/4 kg
  2. Tamarind small gooseberry size
  3. Jaggery l lemon size
  4. Grated Coconut 1/2 cup
  5. Salt 1 tea spoon
  6. Turmeric powder 1/8 tea spoon
  7. Sprig Malacca powder 3 tea spoon
  8. For tempering-- Mustard seeds 1 tea spoon
  9. Urad dal 1/2 tea spoon
  10. Red chilly broken 1 number
  11. curry leaves 1 string
  12. Oil 3 tea spoon
  13. Cumin seeds 1/4 tea spoon

Instructions

  1. Wash the bendi and wipe it wipe it with dry cloth.
  2. This is needed to avoid stickiness of bendi. Cut them into long pieces of size shown below.
  3. Soak tamarind in 1 cup of water for 5 minutes. Extract it's juice and discard the pulp.
  4. Heat a frying pan, add tempering ingredients.
  5. When mustard seeds start spluttering and urad dal turns to brown, add curry leaves.
  6. Now add tamarind extract juice and let it boil.
  7. Now add turmeric powder.
  8. Add jaggery.
  9. Add salt into it.
  10. Add pieces of bendi. Saute well.
  11. Add sprig Malacca powder for good taste.
  12. Let it cook for few minutes with lid closed.
  13. At last add grated coconut and stir well. Now bendi Palya is ready to be serve.
