ABOUT Bitter gourd palya RECIPE

Goes well with chapati. Once in fortnight having bitter gourd is very good. It helps liver to secret bile juice, good for diabetic patients, clears constipation. Try to use it.

Ingredients Serving: 2

  1. 250 gms bitter gourd
  2. 2 teaspoon oil
  3. 1 medium onion
  4. 2 medium tomatoes
  5. 1 tablespoon sambar powder
  6. Lemon sized jaggery
  7. Salt as per taste
  8. 2 tablespoons tamarind pulp
  9. Water to cook
  10. Turmeric powder
  11. 2 tablespoon ground nut powder

Instructions

  1. Take the bitter gourd, clean it and chop it finely (or as per your liking).
  2. Now in a bowl add sufficient water to soak the bitter gourd. Add in salt and turmeric powder. Soak it for atleast 15 minutes. (This process is done to remove the extra bitterness). Then wash it for atleast 4 to 5 times and drain it.
  3. In a pan dry roast the ground nuts and powder it coarsely and keep aside.
  4. In a pressure cooker add oil, heat it on a medium flame.
  5. Add in finely chopped onion and fry till translucent.
  6. Add in drained bitter gourd and fry nicely.
  7. Add in finely chopped tomatoes and fry till mushy (tomato to cook fully).
  8. Add the sambar powder, salt, tamarind pulp and jaggery. Mix well.
  9. Add water to cook the bitter gourd. Close the lid and cook for 2 whistles or until done.
  10. Once pressure is released, open the lid and check for the seasoning.
  11. Now add the ground nut powder and stir well. Serve hot.
  12. Tip - you can reduce the amount of sambar powder and add pepper powder. A combination of the two powders can be made.
