A yummy and delicious curry to be served along with some dal rice.

Ingredients Serving: 2

  1. Small bingan 1/4 kg
  2. Coriander seeds 2 table spoon
  3. Chana dal 2 table spoon
  4. Dried Red chilly 4
  5. Aafoetida - 1/4 th tsp
  6. Grated coconut 4 table spoon
  7. Salt
  8. Small ball of tamarind
  9. mustard seeds - 1 tsp [for tempering]

Instructions

  1. Heat little oil in a pan, fry all the ingredients except the brinjal.
  2. Add salt
  3. Now grind the above mixture into a smooth powder
  4. Cut brinjal and stuff the powder into it.
  5. Steam these stuffed brinjals for 10 minutes.
  6. Heat a kadhai on a low flame.
  7. Add 2 tsp of oil and then crackle some mustard seeds.
  8. Now add the steamed and stuffed brinjals.
  9. Carefully stir them.
  10. once roasted enough, serve them hot.
