A tasty raita made with brinjals. a different but very delicious accompaniment.

Ingredients Serving: 2

  1. Eggplant/baingan - 1
  2. Hung curd - 1 bowl
  3. Finely chopped onion - 1 small size
  4. Curry leaves - 7 - 8
  5. Black mustard seeds - 1/4 tsp
  6. Salt - to taste
  7. Sugar - 1/2 tsp
  8. Oil - 2 tbsp

Instructions

  1. Wash and cut eggplant in round shape
  2. Heat oil in a pan.
  3. Add eggplant/baingan and saute till they are golden and cooked
  4. Hung the curd in a muslin cloth for 2 - 3 hours then prepare raita.
  5. Whisk the hung curd.
  6. Add eggplant into the curd.
  7. Heat one tbsp oil in a pan.
  8. Make the tadka with black mustard seeds,curry leaves and onion,
  9. Then add the tadka to the eggplant raita.
  10. Season with salt and sugar.
  11. Serve chill or room temperature.
