yet another variety of brinjal and potato curry, which is a good side dish for rotis.

Ingredients Serving: 2

  1. Potato - 2
  2. Bringal /baingan - 2
  3. Red chilly powder - 1 tsp
  4. Turmeric powder - 1/4 tsp
  5. Garlic paste - 1 tsp
  6. Panchphoran - 1/4 tsp
  7. Asafoetida - a pinch
  8. Chopped tomato - 1
  9. Salt - to taste
  10. Oil - 2 tbsp
  11. Chopped coriander leaves - 1 tbsp

Instructions

  1. Wash and peel potato and cut into four pieces
  2. Wash and cut the bringal into pieces
  3. Heat oil in a pressure cooker add asafoetida and panchphoran to crackle.
  4. Add potato,bringal,tomato and all the spices and also add 1/2 cup of water and pressure cook.
  5. After one whistle switch off the flame.
  6. Once cooled, add salt and mix well.
  7. Garnish with coriander leaves and serve.
