A yummy dish made with brinjals, by stuffing them.

Ingredients Serving: 2

  1. Baingan - 250 gms
  2. Ginger garlic paste - 1 tsp
  3. Coriander powder - 1 tsp
  4. Red chilly powder - 1 tsp
  5. Turmeric powder - 1/2 tsp
  6. Amchur powder - 1/2 tsp
  7. Garam masala powder - 1/2 tsp
  8. Chopped green chilly - 2
  9. Asafoetida/hing - 1/4 tsp
  10. Cumin seeds - 1/4 tsp
  11. Salt - to taste
  12. Oil - 2 tbsp

Instructions

  1. Wash and clean the baingan.
  2. Trim the stalks and partially slit into quarters
  3. In a small bowl mix all the ingredients well except oil and adjust salt according to your taste.
  4. Stuff this ingredients in the baingan.
  5. Heat oil in a pan.
  6. Add cumin seeds and asafoetida to crackle.
  7. Add stuffed baingan and cover till it is cooked in low flame.
  8. When color of s becomes lightly brown then turn over another side.
  9. Serve hot with rice or chapatis.
