Ingredients Serving: 2

  1. Small baingan - 2
  2. Methi leaves - 100 gns
  3. Garlic cloves - 3 - 4
  4. Green chilly - 2 cut in slit
  5. Coriander powder - 1/2 tsp
  6. Turmeric powder - 1/4 tsp
  7. Cumin seeds - a pinch
  8. Salt - to taste
  9. Oil - 2 tbsp

Instructions

  1. Wash and cut bringal into small pieces
  2. Wash and chop methi leaves
  3. Heat oil in a pan.
  4. Add cumin seeds to crackle.
  5. Add bringal and saute for 2 -3 mins
  6. Add garlic cloves,green chilly ,coriander powder and turmeric powder and saute for one mins.
  7. Add methi leaves and salt and stir fry for 4 - 5 mins.
  8. Turn off the flame
  9. Serve with rice.
