ABOUT Burnt Brinjal In Tamarind sauce/ brinjal gojju RECIPE

Traditional delicasy yet simple recipe of Mangaluru region. Tastes good with boiled rice.

Ingredients Serving: 2

  1. Round brinjal 1 (preferably green one )
  2. Tamarind 1 small gooseberry size
  3. Jaggery 1 small cube
  4. Green chilly 1
  5. Ginger 1/2 inch grated
  6. Salt as required
  7. Oil 1/2 teaspoon

Instructions

  1. Apply little oil on Brinjal.
  2. Keep a grill on gas stove and place the brinjal on grill or hold directly on flame by inserting skewer.
  3. Rotate the Brinjal 3- 4 times for even cooking.
  4. Once it is well cooked take out from the grill.
  5. Once cooled , peel off the  skin. Smash the Brinjal nicely.
  6. Take a bowl ,by adding half cup of water squeeze out the pulp of tamarind. 
  7. Add in salt, jaggery , smash green chilly , ginger.
  8. Mix the mashed Brinjal and serve with Rice.
