ABOUT Smoky Brinjal RECIPE

This recipe gives a smoky flavour to the brinjal and is a very good combination for rotis

Ingredients Serving: 4

  1. Aubergine(large brinjal) 2
  2. Onions 2
  3. Capsicum 1
  4. tomatoes 2
  5. Green chillies 4
  6. Garlic cloves 15
  7. Garam masala 1tsp
  8. coriander powder 1tsp
  9. Red chilly powder 2 table spoons
  10. Kasoori methi 1/2 tsp
  11. Turmeric 1/2 tsp
  12. Tamarind extract 2 table spoons
  13. Jaggery 1small piece
  14. cilantro
  15. curry leaves
  16. Salt to taste
  17. Oil 4 table spoons
  18. Tempering-mustard seeds,cumin,black gram

Instructions

  1. Wash the brinjal and apply oil to it
  2. Slightly prick the brinjal with a knife and stuff green chillies,cut garlic cloves in to it
  3. Place the stuffed brinjal on a medium flame
  4. Allow it to roast over the flame for 20 minutes by turning it
  5. Once the brinjal is roasted it becomes tender.
  6. Remove the stuffed chillies,garlic from it and mash them
  7. Peel the brinjal and immerse it in cold water and allow it to cool
  8. Mash the brinjal and set aside
  9. Heat a pan,pour oil and add tempering to it
  10. Add the chopped onions,mashed chilli garlic paste to the tempering and saute it
  11. Then add chopped capsicum, tomatoes one after the other and mix it well
  12. Saute till the oil starts separating from the mixture
  13. Now add turmeric,red chilli powder, coriander powder,garam masala powder and salt to it
  14. Add the mashed brinjal and stir it
  15. Now add tamarind juice,jaggery and water in to it and mix well
  16. Allow it to boil for few minutes on a medium flame
  17. Add kasuri methi and garnish with chopped cilantros
  18. Serve hot with rotis
