ABOUT Smoky Grilled Aubergines RECIPE

Smoky grilled aubergines is a very spicy hot saucy recipe and good as an accompaniment with drinks as well as a side dish with meals.

Ingredients Serving: 2

  1. 1 big round brinjal
  2. 5 tablespoons pasta/ pizza sauce
  3. Salt to taste
  4. 2 tablespoons black pepper
  5. 2 tablespoons oregano
  6. 1 tablespoon chilli flakes
  7. 3 tablespoons chopped parsley
  8. 1 tablespoon tabasco sauce
  9. 1 tablespoon piri piri powder

Instructions

  1. Wash the aubergine and cut rounds.
  2. Rub salt all over, back and forth and leave it aside for 30 minutes.
  3. After half an hour, pat dry the roundells on a kitchen towel so as to remove all the water left by the salt.
  4. Preheat a grill pan and brush with oil.
  5. Put pizza pasta sauce on both sides of the roundell and sprinkle all the spices liberally. Coat the roundells well on both the side.
  6. Lastly drizzle tabasco sauce all over the roundells on both sidea and lay them on the grill pan.
  7. Cook for around 8-10 minutes till done on both sides, flipping once in a while and remove from fire.
  8. Garnish with chopped coriander or parsley. You can also sprinkle some parmesan cheese.
  9. Serve and enjoy hot smoky aubergines.
