Thinly Slice the brinjal and keep it immersed in salt water
Keep oil for deep frying
While the oil is getting heated strain the brinjal slices on a strainer
Now deep fry few peices at a time
Remove on a kitchen towel
Can roast it a little more or keep it this way. Now sprinkle a little salt, red chilli powder on the fried slices
Now prepare the curd
Add the chopped coriander, very little salt,little roasted cumin powder and stir the curd nicely
Now pour it in the vessel you want to serve
Just before having it put the brinjal slices over the curd mix
Sprinkle some more roasted cumin powder all over. And it's ready to eat
