ABOUT Brinjal Raita RECIPE

Raita should be taken along with meals. It not only enhances the taste, but also helps in digestion. You can prepare a variety of raitas to enhance the satisfaction of every meal. This raita is tasty and different.

Ingredients Serving: 2

  1. Fresh Curd 250 gm
  2. Brinjal 2 small size
  3. Ghee or oil To fry the brinjal
  4. Green chili 1(cut finely)
  5. Salt - ¼ small spoon (as per taste)
  6. Black salt - 2 pinch
  7. Asafetida 1 pinch
  8. Black Mustard Seed - ½ tsp
  9. Cumin seed powder 1 tsp
  10. Fresh coriander 1 tbsp (cut finely)

Instructions

  1. Stir the curd well so that it gets a smooth consistency.
  2. Wash the brinjals and cut into small pieces.
  3. Put oil in a frying pan and heat it. Put the brinjal pieces in the hot oil. Fry them till they turn light brown and then take them out in a plate.
  4. Mix fried brinjal, green chili and salt in the curd.
  5. Put 1 small spoon of oil in a small frying pan and heat it. Add asafetida and black mustard seed to the hot oil.
  6. After frying them, turn off the burner. Mix this tarka in the raita.
  7. Mix half a spoon of roasted cumin seed powder and half a spoon of coriander in the raita.
  8. The Brinjal Raita is ready now. Take it out in a bowl. Garnish it with the remaining roasted cumin seed powder and coriander.
  9. Now refrigerate this bowl of raita for half an hour.
  10. Serve and eat this cold raita along with hot meals.
