ABOUT Gobhi tikka masala RECIPE

Gobhi tikka masala is just variations of paneer tikka and other tikka masala but very bold flavour, combination of different spices, and lastly creamy texture. I am huge fan of Chef Harpal Singh sokhi and his Recipes and my family gobhi lover. Any season i have to make cauliflower ince in a week. Few days ago i tried my hands this super yummy recipe of cauliflower and believe me not its texture it was super yummy. A big hit in my family. Great option for dinner party, Kitty party and potluck.

Ingredients Serving: 4

  1. 1 Big cauliflower florets cut carefully
  2. 1 green capsicum cut in square
  3. 1 medium size onion cut in square
  4. 1 tomato seedless cut in square
  5. For gravy
  6. 1 palm full cashews
  7. 2 big tomatoes chopped
  8. 2 onion chopped
  9. 1 tbsp ginger chilly paste
  10. 1 TBSP GARLIC PASTE
  11. 1 tbsp Chilli powder or as per taste
  12. 1 tbsp coriander powder
  13. Salt to taste
  14. 1 tsp turmeric powder
  15. 1 tsp cumin seeds
  16. 1 tsp garam masala
  17. For marination of Gobhi
  18. 1 cup hung curd
  19. 2 TBSP ROASTED GRAM FLOUR
  20. 1 tbsp oil
  21. 1 tsp carrom seeds
  22. 1 tsp ginger chilly paste
  23. 1/2 tsp garlic paste
  24. 1 tsp or more red Kashmiri chilli powder
  25. Salt to taste
  26. 1 tsp turmeric powder
  27. 1 tsp Coriander powder
  28. 1 tsp dry kasuri methi crushed
  29. 1 tbsp mustard oil
  30. 1 tsp tandoori masala
  31. FOR GARNISH
  32. Fresh cream
  33. Kasuri Methi

Instructions

  1. First we marinate Gobhi
  2. Cut cauliflower florets and blanch it in hot salt water
  3. Heat oil in a pan. Add carrom seeds and gram flour/ besan
  4. Roast it till aroma start coming
  5. Switch off the flame. Let it cool. In a bowl add curd all spices and gram flour mixture, ginger garlic chilli paste
  6. Add cauliflower florets and mix well
  7. Keep it in fridge for set at least 30 minutes. Meanwhile we will make gravy.
  8. In a pan add 1 tsp oil when it's hot enough add chopped tomatoes, cashews and onion. Add little salt and chilli powder add little water and cover it.
  9. When tomatoes become tender switch off the flame and let it cool. Grind it in smooth paste. Heat a pan add 1 tsp oil add chopped capsicum, tomato, and onion. Saute it.
  10. Now will make Gobhi tikka. Heat a grill tawa or non stick pan add oil. Put Gobhi florets and grill it on medium flame. Turn it and grill it from both sides till brown in colour
  11. Keep it out from pan. If you want to bake it in oven preheated oven at 200'C and grill tikka for 10-12 minutes
  12. Now make gravy for tikka masala. Heat a pan. Add oil. Add. Ginger garlic chilli paste. Saute it till raw smell goes.
  13. Add all spices mix well
  14. Add tomatoes onion puree and mix well.
  15. Adjust spices. Add water as needed and cook it till gravy leaves oil add capsicum, onion and tomato, and grilled Gobhi mix well
  16. Cook it another 4-5 minutes. Till gravy leaves oil . Garnish it with fresh cream and Kasuri methi.
  17. Serve hot with chapati or naan. Enjoy your Gobhi tikka masala.
