ABOUT Mutton Rogan Josh RECIPE

Rogan Josh is a staple of Kashmiri cuisine. Brimming with flavours of spices, ginger & yogurt, marked by the sriking red hue & allow you to cook with less amount of oil. This non-vegetarian receipe is beautiful in looks and extremely delicious in taste.

Ingredients Serving: 4

  1. Mutton 1/2 kg
  2. Onions sliced 3
  3. chopped tomatoes 2
  4. Grated ginger 2 tbsp
  5. Garlic paste 2 Tbsp
  6. Curd 1 cup whisked
  7. Mustard Oil 2 tbsp
  8. Ghee 1 tbsp
  9. Salt to taste
  10. Sugar 1 tsp
  11. Corinder powder 1 tbsp
  12. Turmeric powder 1 tbsp
  13. Whole garam masala
  14. Red chilli Saboot 6-7
  15. Coriander leaves

Instructions

  1. Wash well & drain the mutton pieces.
  2. Take in a bowl add Curd, Kashmiri mirch powder, turmeric powder,1 tsp mustard oil, salt, red Saboot chilli, ginger and garlic. Mix well and keep aside for marination just for 30 minutes to 1 hour.
  3. After marination take a pressure cooker put marinated mutton pieces in it and add 1 cup of water & few Coriander leaves.
  4. Cook on high pressure for 10-15 mins (2-3 whistles) depends on the quality of mutton till it is 3/4 th done.
  5. Now heat ghee & 1.5 tbsp mustard oil in Kadhai. Add whole Garam masalas like (cumin seeds, green and black cardamoms, Cinnamon, cloves etc) & sugar.
  6. Put sliced onions, grated ginger in it and saute.
  7. After 3-4 mins add garlic paste, half of the chopped tomatoes and saute.
  8. Now add salt, coriander powder, turmeric powder & mix.
  9. When the pressure cooker released its pressure, open the lid and take out the mutton juice from it. Now put the juice in the Kadhai & mix well.
  10. Cook until the oil seperates. Then add mutton pieces in it and mix.
  11. Add another remaining chopped tomatoes.
  12. Cook it with closed lid in low flame for 15 mins.
  13. Now add 2 cups of water or according to your need & again 1 tbsp Kashmiri mirch powder. closed the lid and cook it in the low flame for another 15 mins.
  14. The Mutton Rogan Josh is ready to serve. Sprinkle Coriander leaves in it.
  15. You can serve this with roti, naan or plain rice.
