ABOUT Beguni (brinjal fritters) RECIPE

Its a great time snack for any season specially monsoon and winter. Crunchy delicious fritter.

Ingredients Serving: 4

  1. One big brinjal cut into long thing slices
  2. Salt
  3. Turmeric
  4. Chilly powder
  5. Ajwin 1/2 teaspoon
  6. Kalonji 1/4th teaspoon
  7. Besan 250 gms
  8. Mustard Oil for Deep Frying
  9. Baking soda one pinch and baking powder 2 pinch

Instructions

  1. At first slice the bringals very fine slices lenth wise
  2. Add a little salt and turmeric over the sliced brinjal so that water comes out
  3. In a bowl add the besan add the turmeric one pinch ,salt to taste ,add kalonji and ajwin add baking powder and baking soda as mentioned . Add water to make a smoothe consistency add two teaspoon hot mustard oil in the batter and keep aside for 5 mins.
  4. Now heat good amount of mustard oil in a deep kadai and dip the brinjal slices in the batter and deep fry.
  5. Serve hot with puffed rice or have it one cup of hot tea or khicdi
