ABOUT Brinjal Fritters RECIPE

Delicious brinjal fritters made with Urad and Moong dal spiced batter.

Ingredients Serving: 4

  1. Brinjal - 3 thinly sliced
  2. Moong dal - 4 tbsp
  3. Urad dal - 4 tbsp
  4. Maida - 3 tbsp
  5. Ginger Garlic Paste - 1 tsp
  6. Green chilly - 2 chopped finely
  7. Turmeric powder - ¼ tsp
  8. Chilly powder - 1 tsp
  9. Amchur powder - ½ tsp
  10. Coriander powder - ½ tsp
  11. Cumin powder - ½ tsp
  12. Coriander leaves - 2 tbsp Chopped
  13. Salt to taste
  14. Water as required
  15. Oil - 1 cup

Instructions

  1. Slice the brinjal in thin slices, add little salt, mix well and keep aside.
  2. Grind the dals into fine powder. Take all the ingredients in a mixing bowl and mix well
  3. Add water and make a smooth batter. The batter should not be too thin nor too thick.
  4. Add chopped coriander leaves and mix well.
  5. Heat oil in a pan.
  6. When the oil is hot, reduce the heat and dip the brinjal ino the batter and drop them in the hot oil.
  7. Fry them in batches in low-medium heat for 2-3 mins.
  8. Flip over and fry till golden and crisp.
  9. Drain in absorbent paper and serve with any chutney as a snacks or as a starter or side dish.
  10. Ready to serve
