Ingredients Serving: 4

  1. For Soya crust; 3/4 cup whole wheat flour
  2. 1/4 cup all purpose flour
  3. 1/2 cup soya bean flour
  4. 1 cup grated carrot
  5. 2 tsp carom seeds
  6. 1/4 cup cold butter
  7. 1/2 cup chilled water or use milk also
  8. 1/2 tsp Salt
  9. extra milk for glaze
  10. For filling ;2 medium sized boiled and mashed potato
  11. 1 onion chopped
  12. 2 garlic cloves chopped
  13. 1 inch ginger chopped
  14. 1 green chilli chopped
  15. 10-12 fresh fenugreek leaves chopped
  16. 1 tsp Roasted Cumin Powder
  17. 1 tsp Kasuri Methi
  18. 1 tsp Lemon juice
  19. For sour cream mixture,1/2 cup sour cream
  20. 2 tsp green chilli and corriender paste
  21. Salt as required
  22. oil for cooking
  23. some grated carrot and some chilli flakes for garnish.

Instructions

  1. Take wheat,soya bean,all purpose flour,salt,grated carrot and carom seeds in a bowl and mix and add cold butter in it and mix well.
  2. Now now chilled water or milk in it and mix and prepare a firm dough of it. cover it and keep it in fridge to set at least 2-3 hours.
  3. In other side heat oil in pan add chopped onion when translucent add chopped ginger,garlic after 30 sec add green chilli,add chopped fresh fenugreek leaves and continue stir it.
  4. Now add boiled potato,salt,roasted cumin powder,Kasuri methi one by one and cook it for 5-8 min and mix well and finally add lemon juice and mix again and switch off gas.
  5. In other bowl take sour cream add coriander,green chilli paste and salt and mix well.
  6. now add add this sour cream mixture in cooked boiled potato mixture and mix well.
  7. Now take out dough from fridge and divide it in 4 equal parts,and make round shape of it and place it in greased,lined baking tray.Do same with all.
  8. Now place sour cream mixed cooked potato mixture in it . leave 1 inch from edge.
  9. Now fold the edge inside and glazed it with milk.
  10. Now bake it in preheated oven for 25-30 min at 180* or till soya crust cook or till light brown in colour.
  11. When it is done serve hot at time of breakfast or as well as brunch,with grated carrot,ketchup and green chutney,sprinkle some chilli flakes over it if need.
