ABOUT Kadhai style Veg fried rice RECIPE

This receipe is very easy & simple but cooked in unique style. This comfort food made with lots of vegetables to make a lip smacking Kadhai fried rice. You can serve as a main dish in any parties.

Ingredients Serving: 4

  1. Any pulav rice 400 gms (2 bowls)
  2. Sliced carrot 1 cup
  3. Sliced capsicum 1 cup
  4. Coriander leaves
  5. Black cardamom 2 pcs
  6. Green cardamom 2-3 pcs
  7. Cloves 5-6
  8. Bay Leaves 1
  9. Pinch of hing
  10. Cumin seeds 1 tsp
  11. Water
  12. Salt to taste
  13. Sugar 1 tsp
  14. Garam masala powder 2 tsp
  15. Ghee 1 tbsp
  16. Fried Cashew nuts
  17. Refined oil 1 tbsp

Instructions

  1. Wash and drain the rice and keep aside for 15 mins .
  2. Now sliced the carrot and capsicum.
  3. Fried some cashew nuts in ghee & set aside.
  4. Heat oil and ghee in kadahi put cumin seeds when they started splutter add bay leaves, black cardamom, green cardamom, cloves, Cinnamon, hing.
  5. Put rice in it and stir in high - medium flame.
  6. After 5-10 mins add sliced veggies in it.
  7. Mix well in medium flame and stir continuously. Now add salt & sugar in it.
  8. After sometime add Garam masala powder and drop some ghee and mix well.
  9. When the rice becomes crisp then add water in it.
  10. When the water started simmering cover the lid and switch the flame on low. Check and stir in between.
  11. When they cooked switch off the flame. Garnish with cashew nuts and Coriander leaves.
  12. Serve hot in lunch or dinner parties.
