ABOUT Mango sago pudding RECIPE

Mangoes are in season and am sure all mush be relishing them. The mango sago pudding is a very humble yet exotic and quick mango dessert with all the goodness and flavours to satiate one's sweet tooth.

Ingredients Serving: 2

  1. Ripe mango large size 1 number
  2. Mango juice 1/2 cup
  3. Sago/Sabudana/ Tapioca 1/4 cup
  4. 1/2 cup evaporated milk or
  5. 1/2 cup condensed milk
  6. Sugar 3-4 tbsp or as per the taste
  7. For garnishing
  8. 2 tbsp mango chunks
  9. 2 mint sprigs

Instructions

  1. Soak the sago in water for 2 hours and drain, this will wash away some of the starch from the sago.
  2. In a saucepan of boiling water add the sago and sugar.
  3. Cook, stirring the sago over medium-high heat.
  4. When the sago becomes partially cooked (translucent) turn the heat off.
  5. Now drain it and run under cold water, strain and keep aside.
  6. Peel and chop the mangoes and reserve finely chopped mango pieces for garnish.
  7. Blend rest of the mango pieces with evaporated milk and sugar to make smooth paste.
  8. The amount of sugar can be adjusted according to the sweetness of the mangoes.
  9. Add the mango juice and mix well.
  10. Now add the sago to the prepared mango smoothie and mix well.
  11. Pudding is ready
  12. For serving
  13. Pour a tsp of mango smoothie in bowls or small glasses, add prepared sago pudding.
  14. Top with Mango chunks and mint sprig.
  15. Now refrigerate for 2 hours until cool.
  16. Serve chilled with love.
