Ingredients Serving: 4

  1. Carrot: ¼ cup
  2. Red bell pepper: ¼ cup
  3. Capsicum: ¼ cup
  4. Shredded cabbage: ¼ cup
  5. Chicken: 200g (opt this out if you are making veg soup)
  6. Spring onion: 2 tbsp
  7. Green chilies: 2 tbsp + 1 tsp
  8. Garlic: 1 tbsp
  9. For the Sauce:
  10. Tomato puree: 2 tbsp
  11. Red Chili sauce: 1 tbsp
  12. Soy sauce: 1 tbsp
  13. Vinegar or Lime juice: 1 tsp
  14. Ground black pepper: 1 tsp
  15. Vegetable/Chicken stock: 2 cup (or equal amount of warm water)
  16. Oil: 2 tbsp, any colourless & odourless oil
  17. Salt to taste (remember, soy sauce contains salt already)

Instructions

  1. Chop all the veggies and meat (if using any) finely.
  2. Saute garlic and half of the green chili in 2 tbsp hot oil for 30 sec. Add carrot and chicken and sauté for 2-3 mins on high flame.
  3. Once carrot and chicken are almost done add cabbage, bell pepper and capsicum and sauté for 1 min on high flame.
  4. Take a small mixing bowl and mix tomato puree, red chili sauce, soy sauce & vinegar together and pour into the wok.
  5. Add vegetable/chicken stock and stir gently. Keep on high flame and allow to boil for 2 mins. Sprinkle the spring onion and ground black pepper and switch off the flame. If you are using salt add at this point.
  6. Transfer to the serving bowls and serve piping hot immediately. Garnish with more spring onion and fried noodles on top.
