ABOUT Dal bati bharta RECIPE

This is traditionally rajasthani recipe which I have twisted as this recipe I had in a small restaurant in U. P. So actuly it's fusion of two states.

Ingredients Serving: 4

  1. For Dal :
  2. Masoor dal 1/4 cup
  3. Chana dal 1/4 cup
  4. Toor Dal 1/4 cup
  5. Moong dal 1/4 cup
  6. Grated garlic 5 to 6
  7. Cinnamon stick 1/2 inch
  8. Bay leaves 2
  9. Cumin seed 1/2 tsp
  10. Red chilly powder 1/2 tsp
  11. Turmeric powder 1/2 tsp
  12. Salt 2 tsp
  13. Onion (Chopped) 1
  14. Tomatoes (chopped) 1
  15. Oil 1 tbs
  16. Tadka for dal :
  17. Oil 1 tbs
  18. Curry leaves 5 to 6
  19. Whole red chilly 3 to 4
  20. For bati :
  21. Maize flour 1 & 1/2 cup
  22. Wheat flour 1 cup
  23. Chopped onion 1 tbs
  24. Chilly garlic paste 1 tsp
  25. Oil 2 tbs
  26. Curd 1/2cup
  27. Salt to taste
  28. For bharta :
  29. Boiled potatoes 4
  30. Chopped onion 1 tbs
  31. Chopped tomatoes 1 tbs
  32. Turmeric powder 1/4 tsp
  33. Salt to taste
  34. For garnishing bharta :
  35. Lime juice
  36. chopped onion
  37. Chopped Tomatoes
  38. Chopped coriander leaves

Instructions

  1. Soak all the dal for hour
  2. Wash and add dal, masala garlic and sufficient water in a pressure cooker and cook till done.
  3. Heat a pan add oil in it and saute onion till golden brown.
  4. Add tomatoes and cook until soft.
  5. Add cooked dal and mix properly.
  6. in a tadka pan add oil, curry leaves and red chillies saute for a while.
  7. Now add this tadka in Dal.
  8. For bharta :
  9. Peel and mash potatoes.
  10. In a pan heat oil add onion and saute until soft and add tomatoes till cook.
  11. Add salt, turmeric powder and potatoes and cook for a minute.
  12. Garnish with lime juice, chopped tomatoes, chopped onion and coriander leaves.
  13. For bati :
  14. Add all ingredients and knead dough of medium softness.
  15. Rest for 2 to 3 hour. And make small balls out of it.
  16. Cook in tandoor till all bati done. If you see crack on balls(batis) then remove all batis from tandoor.
  17. Assembling: in a Thali keep, dal in a bowl, Bharata in other bowl, bati, crushed bati , onion and green chilly.
  18. Enjoy your food with pure veg way.
