Ingredients Serving: 2

  1. Brinjal - 6 chopped in large pieces
  2. Onion - 1 large, chopped
  3. Tomato - 1 large, chopped
  4. Curry leaves - 7
  5. Coriander Leaves - 1/2 Cup
  6. Turmeric Powder - 1 tsp
  7. Red Chilli Powder - 1 tsp
  8. Coriander Powder - 1 tsp
  9. Oil - 2 tsp
  10. Salt to taste

Instructions

  1. First heat oil then put curry leaves and fry, add brinjal and stir fry them until cooked.
  2. Now take out brinjal in a plate. Heat 1 tsp oil, add garlic ginger paste and then onion. Cook onion till brown then add tomato and coriander leaves.
  3. Stir until cooked then add coriander powder, turmeric powder, red chilli powder and mix. Add fried brinjal. Add salt and garam masala. Cook for 3 minutes and its ready to serve.
