ABOUT Stir Fry Masala Baigan/Brinjal RECIPE

Small long breed brinjal in my style masala/gravy.

Ingredients Serving: 5

  1. 4-5 small long breed brinjal
  2. 1 large onion
  3. 1 medium onion- fine chopped
  4. 2 medium tomato
  5. 2 green chili chopped
  6. 4-5 garlic
  7. 1 spoon Kashmiri red chili
  8. 1/2 spoon hing
  9. 1 1/2 tbs coriander powder
  10. 1 teaspoon salt or as per taste
  11. 1 teaspoon turmeric
  12. 1/2 teaspoon dum aloo masala
  13. 1 dry whole red chili for tadka
  14. 1 teaspoon cumin seeds
  15. 1 tbs chopped coriander leaves
  16. 2 tbs oil
  17. 1 teaspoon garam masala
  18. Water as required

Instructions

  1. First cut brinjal in four pieces but not cut through out and soak in water. Keep aside.
  2. Grind one onion, garlic and one tomato together.
  3. In a skillet, heat oil and add red whole chilli after breaking into two pieces. Now add cumin. When cumin seeds start crackling then add hing, chopped onion and green chillies. Stir constantly until transparent then add ground spices and stir constantly. If masala looks just brown add salt, red chili powder, turmeric powder, coriander powder, aloo dum masala.
  4. Stir 8-10 min. Until oil starts leaving the sides. Now add chopped tomatoes and 3-4 spoon water. Cover with lid and cook 3-4 min until tomatoes and masala mix together.
  5. Now add brinjal and some water , cover and cook.
  6. When brinjal is tender add garam masala. Stir for a few minutes and then switch off the gas.
  7. Garnish with coriander leaves.
