ABOUT Gajar Shaljam Ka Pani Wala Achar RECIPE

This is an instant pickle made with spices and water specially during winters when we get fresh carrots and turnips. Makes a quick flavorful spicy condiment that goes best with your winter meals.

Ingredients Serving: 4

  1. 4 turnips, peeled and sliced
  2. 2 carrots, peeled and sliced
  3. 1.5 cups water
  4. 2-3 tbsp vinegar
  5. 1 tsp mustard seeds
  6. 1 Tbsp Fennel Seeds
  7. 1 tsp cumin seeds
  8. 1 tsp Fenugreek seeds
  9. Salt to taste

Instructions

  1. Cut vegetables into thick slices and wash it nicely. Add 1.5 cups of water and the vegetables in a cooker and pressure cook only till 1 whistle.
  2. Turn off the gas and allow the steam to release. Once the steam is completely released and the lid of the cooker opens easily, transfer the vegetables along with the water in a pan and keep aside.
  3. In a separate pan, dry roast mustard seeds, cumin and fennel along with some fenugreek seeds and crush them partially through a mortar pestle.
  4. Add vinegar , salt and the crushed spices to the cooked turnip and carrot and stir nicely. Give a gentle boil and switch off the gas.
  5. Allow the pickle to cool down completely and later transfer it in a jar or any container and store in fridge.
