ABOUT Maat ki Bhaji...(Amaranthus Stir Fry) RECIPE

This is a simple yet so very yummy bhaji recipe from my birthplace Hyderabad. Many people make it differently, some even add mutton to it. But what i say is, it is best enjoyed on it's own with just a few spices to go. And the best part is that it is easily available too.

Ingredients Serving: 4

  1. Amaranthus bunches 2
  2. oil 2 tbsp
  3. RED CHILLI POWDER 1 TBSP
  4. Asafoetida (hing) a pinch
  5. Salt 1 tsp
  6. Turmeric 1/2 tsp
  7. Onion large sliced 1
  8. Ginger garlic paste 1 tsp

Instructions

  1. Wash the bunches of the amaranthus and pluck only the leaves from it.
  2. In a pot, heat oil and add the asafoetida.
  3. After about a second or two, add the sliced onion and the ginger garlic paste.
  4. Saute it for 2 minutes until the raw smell fades away.
  5. Now add the rest of the ingredients followed by the amaranthus leaves.
  6. On a medium to high flame, let it simmer for the first ten minutes.
  7. Later on, for the last 5 mins, stir fry it turning well so that it does not stick to the pot.
  8. Serve it hot with ghee rice and pickle. It tastes just yummy.
