Ingredients Serving: 4

  1. Brinjal - 250 gm
  2. Rice flour - 2 Tbsp
  3. Turmeric - 1 tsp
  4. Red chilli powder - 1 tsp
  5. Coconut oil - 3 tbsp
  6. Salt as required

Instructions

  1. In large plate, mix the rice flour, turmeric, red chilli powder and Salt.
  2. Cut the Brinjal into medium slices. Place these over the above flour mix and coat each Brinjal slice. Rub of the excess flour.
  3. Shallow fry these in coconut oil till nice golden and crisp on both sides.
  4. Serve hot along with Roti Sabzi as a side dish.
