Brinjal roll is very tasty and new dish

Ingredients Serving: 4

  1. 4 brinjal
  2. 4 potatoes
  3. Half a cup fried crushed peanut
  4. 1 finely chopped onion
  5. 1 finely chopped green chilli
  6. Half a cup coriander leaves
  7. 1 table spoon ginger garlic paste
  8. 7-8 curry leaves
  9. Salt as per taste
  10. 1 table spoon lemon juice
  11. Cumin powder half table spoon
  12. Chaat masala for Sprinkle
  13. Oil to fry

Instructions

  1. Cut the brinjal in long slices and put it into water
  2. Boil the potatoes for 4 whistle
  3. When it cool completely peel the potatoes and mashed it
  4. On a tava add oil and fry the brinjal slices and Sprinkle salt over it
  5. Fry both sides
  6. In a pan heat the oil deep fry the peanuts and take away and crushed them
  7. In a pan heat oil add curry leaves, finely chopped onion and green chilli, fry it
  8. Add cumin powder, ginger garlic paste saute it well
  9. Add salt as per taste, off the gas
  10. Add lemon juice, coriander leaves and crushed penuts
  11. Mix it well
  12. Let it cool completely
  13. Take the brinjal slices put the potato mixture over it and roll it gentaly
  14. Pin with toothpick
  15. Sprinkle chaat masala over the rolls Garnish with crushed peanuts and coriander leaves
  16. Serve with cucumber and onion slices
