This is a traditional recipe of Rajasthan. You can eat it as breakfast and also for dinner or as snack. It is a protein rich dish.

Ingredients Serving: 4

  1. Maize flour 1 cup
  2. Semolina 1/2 cup
  3. Curd 1 cup
  4. Salt to taste
  5. Sugar 2 tablespoons
  6. Black pepper powder 1 teaspoon
  7. Fruit salt 1 sachet
  8. Lemon juice 1 tablespoon
  9. Carrot 1 cup shredded
  10. Green peas boiled 1/4 cup
  11. For tempering:
  12. Green chilli 2 slitted
  13. Oil 1 tablespoon
  14. Mustard seeds 1 tablespoon
  15. Asafoetida a pinch
  16. Sugar syrup ( add 3 tablespoons of water with 2 tablespoons of sugar, mix well)

Instructions

  1. Add maize flour and semolina​ and mix well. Add curd and make a smooth batter, add green peas and shredded carrots, salt, sugar, black pepper and lemon juice. Mix well and set aside for 20 minutes.
  2. Put water in a steamer and when water starts boiling, grease a dish and add fruit salt to batter. Immediately put this batter to greased dish. Put it into steamer.
  3. Cook for 15 minutes. Check it with the help of toothpick. If it comes clean it means your dhokla is ready. Remove it from steamer.
  4. For tempering, add oil in a pan, add mustard seed and asafoetida to it and slitted green chilli. When it starts spluttering remove it and add sugar syrup.
  5. Pour this tempering over dhokla and garnish with green chilli and coriander.
  6. Serve with mint chutney and tamarind chutney.
