ABOUT Thai Raw Mango salad with a spl Thai vinaigrette RECIPE

Raw mango, small red chilli, roasted peanuts with a refreshing Thai vinaigrette

Ingredients Serving: 2

  1. Mango barely ripe but firm 1 medium
  2. Lemon juice 1/2 tablespoon
  3. Honey 1/2 tablespoon
  4. Gingelly oil 1/2 tablespoon
  5. Salt to taste
  6. Red chilli sauce (optional)
  7. Pepper powder if not using chilly sauce 1/2 tablespoon
  8. Roasted peanuts 1/2 cup
  9. Kaffir lime leaves de-veined and shredded 4-5 leaves.

Instructions

  1. Cut mango into long thin julienne
  2. Sprinkle salt, mix and keep aside for 5 minutes and let drain.
  3. Thai vinaigrette :-
  4. Whisk together lemon juice, honey, pepper powder/ chillies/ chilli powder, lime leaves and salt
  5. Heat pan, roast peanuts till golden
  6. Drain mango, add vinaigrette and refrigerate
  7. Remove salad just before serving and add roasted peanuts.
