Ingredients Serving: 2

  1. French beans 250 gms
  2. Baby potatoes 100 gms
  3. Vegetable oil 2 teaspoon
  4. Thai peanut sauce- peanut butter 3 tablespoon
  5. Coconut cream 1 tablespoon
  6. Coconut milk 3,4 tablespoon
  7. Soy sauce 2 teaspoon
  8. Thai red curry paste 1 teaspoon
  9. Light brown sugar 2 teaspoon
  10. Lime juice 2 teaspoon
  11. Sesame oil 1/2 teaspoon
  12. Crushed garlic 1,2 cloves
  13. Garnish- roasted peanut 1 tablespoon
  14. Roasted coconut flakes 1 tablespoon
  15. Sesame seeds 1 teaspoon

Instructions

  1. Trim the ends of french beans and blanch in boiling water with some salt and oil(to retain colour) for 3 minutes. And then immediately wash with cold water(to stop further cooking).
  2. Pressure cook washed baby potatoes with some salt for 2 whistle. Cool and peel.
  3. Prepare Thai peanut sauce. Mix all the ingredients of sauce. Use more or less almond milk to adjust the consistency.
  4. Saute baby potatoes and french beans in some oil for 2 minutes.
  5. Plating- a) Put sauteed veggies in serving plate. b) Dizzle generous amount of Thai peanut sauce over the veggies. c) Garnish with roasted peanut, roasted coconut flakes and sesame seeds.
