ABOUT Dahi Bhindi RECIPE

It is a stir-fried bhindi cooked in curd and besan or gram flour based mild spicy gravy and outright delicious. This simple and easy bhindi preparation has a liquid gravy texture that makes it an ideal Indian vegetable curry to be enjoyed with rice or roti.

Ingredients Serving: 2

  1. 250gm Bhindi or Okra
  2. 1 Cup Curd
  3. 1tsp Gram Flour
  4. 1 Onion Chopped
  5. 2 Dry Red Chilly
  6. 1/4tsp Cumin Seeds
  7. 1/4tsp Mustard Seeds
  8. 1Strip Curry Leaves
  9. 1/2tsp Turmeric Powder
  10. 1tsp Coriander Powder
  11. 1tbsp Fresh Coriander Leaves
  12. 4tbsp Cooking Oil
  13. 1/2 Cup Water

Instructions

  1. Wash and dry bhindi, remove or discard head n cut it into 1/2 inch thick circles.
  2. Add 4tbsp oil in a wok, add bhindi and shallow fry over medium flame for 8 to10 minutes until they shrink and turn into dark green color. Now transfer bhindi to a plate.
  3. whisk curd and gram flour with 1/2 cup of water until smooth.
  4. Heat remaining 2 tbsp oil in the same wok add cumin seeds and mustard seeds. When the seeds begin to crackle add onion, curry leaves, and dry red chillies. Saute until onion turns light brown.
  5. Add whisked curd mixture, coriander powder, turmeric powder and salt. Cook gravy for 2mins on low flame.
  6. Add shallow fried bhindi and cook it for 4-5 minutes.
  7. Serve hot with roti or rice.
