ABOUT Paratha quesadillas with sweet & sour salsa RECIPE
Boring parathas get a makeover to suit young ones taste. With a filling of Rajma beans & oh so favourite Cheese.

Ingredients Serving: 2
For parathas -1/2 cup whole wheat flour
1/3 cup Oats powdered
2 tbsp makki atta
Multigrain flour- 3/4 cup
Milk- 2 tbsp
Warm water for kneading dough
Salt to taste
for filling- 1 cup boiled and mashed rajma
2-3 flakes crushed garlic
Salt to taste
1 large onion chopped
2 tomatoes finely chopped
1/4 cup chopped bell peppers
2 tsp tomato chilli sauce
1/4 cup grated cheese
2-3 tsp vegetable oil ( for shallow frying)
To make the Salsa : Kiwi 1
Tomato- 1
Onion-1
1 tsp lemon juice
Salt and pepper to taste
Fresh mint and coriander leaves- a few
Instructions
Mix all the paratha ingredients & knead into a soft pliable dough. Keep aside for 10- 15 mins. Divide into 4 roundels & roll into flat discs or rotis on a floured surface.
Put on a hot skillet and flip once small specs appear.
Cook from the other side till lightly browned. Place on a clean paper towel and cover loosely with a cloth napkin. Keep aside.
To make the filling: Heat a tsp of oil in a pan, sauté garlic and onion. Add tomatoes and cook till mushy.Mix in bell peppers, mashed beans, sauce and salt. Cook for a minute.
Spread the bean mixture on the paratha. Sprinkle grated cheese & cover.Repeat with the second paratha.Cook on a greased skillet for 3-4 mins or till both the sides are crisp and golden.
Sweet & sour Salsa - Mix together 1 chopped kiwi, 1 chopped onion, 1 chopped tomato, 2 tsp lemon juice, 1 tbsp finely chopped mint/ basil/ coriander. Season with some salt and pepper .
Toss well and serve.
