ABOUT Kidney Beans Quesadilla with Salsa RECIPE

Beans quesadilla is a Mexican snack and salsa is a dip. This is a true trick for getting your child to eat vegetables and a perfect weeknight dinner.

Ingredients Serving: 2

  1. 1/2 cup Kidney beans
  2. 1/4 cup Red bell peppers (capsicum)
  3. 1/4 cup Rreen bell peppers finely chopped
  4. 2 Tortillas (flour sheet)
  5. 1/2 cup Grated cheese
  6. 1 teaspoon Lime juice
  7. Garlic minced
  8. 1 Green onion finely chopped
  9. Red sauce to taste
  10. Salt to taste
  11. Oil for toasting
  12. Butter for smearing
  13. Coriander leaves
  14. For salsa : 1 onion
  15. 1 tomato
  16. Green chillies
  17. Tobasco sauce/ Tropicana tomato juice
  18. Tomato ketchup

Instructions

  1. To begin first prepare all the ingredients and keep them ready for cooking.
  2. Place kidney beans in a bowl and boil them. After that drain and roughly mash with a fork.
  3. In a heavy bottomed pan add a teaspoon of oil and the chopped garlic, bell peppers, beans.
  4. Sprinkle salt and stir fry until they are cooked through.
  5. Once cooked add the red sauce, stir in the coriander leaves and squeeze lime juice.
  6. Allow the roasted filling to cool down a bit.
  7. Place the tortillas ( flour sheet) on a flat surface spoon the roasted mixture into one half of the tortillas, spoon a good amount of cheese over the mixture beans and roll out the quesadilla to form a roll shape.
  8. Smear some softened butter on the top and place the stuffed quesadilla on a preheated tawa.
  9. Cook both sides by applying butter untill golden and crisp.
  10. Once done cut them into diagonal half and serve with salsa for a quick weeknight dinner.
  11. For salsa : finely chopped onion, tomato and green chillies.
  12. Add tomato ketchup and Tobasco sauce for tangy flavour if you don't have Tobasco sauce instead of it you can use more chillies and Tropicana tomato juice.
