ABOUT Kalo Jaam | Kala Jamun RECIPE

Kalo Jam is one of the loved sweet in Bengal. Generally, kalo jam made with khoya and chena but I have made it with milk powder.

Ingredients Serving: 10

  1. Milk powder - 1 1/2 cup
  2. Maida /all purpose flour -3 tbsp
  3. Arrowroot - 3 tbsp
  4. Baking Soda - 1/4 tsp
  5. Milk for kneading dough
  6. For sugar syrup -
  7. Sugar- 2 cup
  8. water- 1 1/2 cup
  9. Cardamom- 2-3

Instructions

  1. Knead a soft and smooth dough with milk powder, Maida, arrowroot, Baking soda and milk. Cover it with a wet cloth for 10-15 mins.
  2. Meanwhile, make a one thread sugar syrup with sugar. Water and cardamom.
  3. Now heat a large kadai with enough oil for deep frying kalo jaam.
  4. Now divide the milk powder dough into 20 equal small portions.
  5. Make smooth round balls from each portion without any cracks.
  6. Now add all the balls slowly into medium hot oil.
  7. Fry till golden brown on low-medium heat.
  8. Put balls on the paper towel. Let it cool.
  9. Again fry all the balls till blackish in colour.
  10. Now add fried kalo jaam in to the warm syrup.
  11. Keep kalo jaam in the syrup for 3-4 hrs or till jamuns soak enough syrup and become soft.
  12. Serve
