Ingredients Serving: 4

  1. Multigrain Atta - 2 cups
  2. Fresh Mint leaves - 4 tbsp
  3. Green Chillies- 2
  4. Salt as per taste
  5. Oil
  6. Water for kneading the dough
  7. Sesame seeds -1 tbsp
  8. Flax seeds- 1tbsp
  9. Saunf - 1 tsp
  10. Peppercorns- 1 tbsp
  11. Chat Masala - 1 tbsp
  12. Mint Leaves - A handful

Instructions

  1. There are 3 sections to this lip smacking recipe.
  2. First we will start with the basic dough
  3. In a bowl, add Atta, chopped green chillies, chopped mint leaves and salt. Add enough water to make a soft dough.Cover it and keep it aside for 20 min.
  4. Dry roast all the spices(sesame seeds,saunf and peppercorns)
  5. In the same pan, dry roast the mint leaves till it becomes crisp.
  6. After it's done, let it cool down to room temperature, grind to a fine powder
  7. As soon as it is done, mix the spice mix along with chat masala in a bowl
  8. Keep it aside
  9. Once the dough has rested enough, make lemon size balls of dough
  10. Dust the rolling surface as well as the dough ball.
  11. Start rolling out your balls into 6-7 inch thin parathas .
  12. When they are done,apply a little oil all over the paratha and sprinkle the spice mix to the paratha .
  13. Then fold the circle to make a triangular shape.
  14. Roll it until it becomes thin at the edges.
  15. Place the paratha on a hot tawa.
  16. Wait till it puffs up, then flip to the other side and apply oil on both sides.
  17. Now the pudina parathas are ready. Serve hot with any side of your choice. Enjoy your meal!!
