Ingredients Serving: 5

  1. For paratha
  2. Wheat flour 1cup
  3. Maida 3tbsp
  4. Salt to taste
  5. Oil 2tsp
  6. Mint leaves finely chopped 2tbsp
  7. For brinjal curry
  8. Brinjal 2 cut into pieces
  9. Potato 1 diced
  10. Tomatoes 2 (pureed)
  11. Groundnuts 2tbsp
  12. Til 2tsp
  13. Dry coconut 2tbsp
  14. Green chilli 2
  15. Onion 1 finely chopped
  16. Oil 2tbsp
  17. Salt to taste
  18. Red chilli powder 1tsp
  19. Turmeric powder 1/2tsp
  20. coriander powder 1tsp
  21. Water 1cup
  22. Garam masala 1tsp
  23. Coriander leaves

Instructions

  1. For pudina paratha Make dough by mixing wheat flour maida salt mint leaves and oil
  2. Dough should not be hard
  3. Roll out a big round chapati brush oil all over it and sprinkle dry maida over it
  4. Cut long strips of 1"width of this
  5. Fold this strips one over the other and make a round striped flattened ball
  6. Roll this again like a chapati and cook it on tava with a little oil
  7. For brinjal curry
  8. First dry roast ground nuts til dry coconut and crush in powder form
  9. Heat oil in a pan add onion and saute
  10. Add potato and brinjal and cook on high flame
  11. As they soften add powder of ground nuts salt red chilli powder garam masala turmeric powder mix well
  12. Finely add tomato puree and mix
  13. Cook till oil separates
  14. Put a lid on and cook on low flame for 2 min
  15. Garnish with coriander leaves
