I love rice. I also love garlic and cook with it a lot. It took a few tries to get the correct measurements for this recipe, I don't always use measurements when I cook. This is very easy to make. This is a very moist, but not overpowering garlic flavor. For rice with less moisture,

Ingredients Serving: 4

  1. 3 tablespoons olive oil
  2. 1 medium onion, diced
  3. 1 cup long-grain brown rice, rinsed and drained
  4. 1 garlic clove, minced
  5. 1 1/2 cups Water
  6. Kosher salt
  7. 1/4 cup finely chopped fresh herbs basil, chives, cilantro, mint, or tarragon

Instructions

  1. chopped mixed herbs, such as parsley, chives and tarragon In a medium saucepan, add olive oil Add the onion, cover and cook over low heat until translucent, 5 minutes. Stir in the rice and garlic.
  2. Add the water and 1 teaspoon of salt and bring to a boil over high heat. Cover and cook low heat for 10 minutes.
  3. Replace the lid on the rice with a clean kitchen towel and remove from the heat. Let the rice stand, covered, for 5 minutes until tender.
  4. Using 2 forks, lightly fluff the rice. Gently stir in the herbs, season with salt, cover with the towel and the lid and let stand for up to 30 minutes before serving.
