Ingredients Serving: 10

  1. Indian Gooseberry 2kg
  2. Mustard oil 1 1/2 ltr
  3. Red chillies 12-14
  4. Cumin seeds 3-4 tsp
  5. Ajwain seeds 2-3 tsp
  6. Kalonji 2 tsp
  7. Mustard seeds 3-4 tsp
  8. Methi seeds 2-3tspn
  9. Coriander seeds 2-3 tsp
  10. Garlic 2-3 pods
  11. Red chilly powder as per taste

Instructions

  1. Make a slit from 4 sides on the Indian gooseberry and boil it in a wok til its done. Do not over boil it. Separate the amla pieces according to the slits made. It will break into 4-5 pieces. Then keep it in a big thal to dry. Dry it only till the water in it gets dried.
  2. Now boil some oil and add it to the gooseberry and keep it in a bottle and keep it in in sun for a day.
  3. Now, roast all the masalas separately. Do not over roast.
  4. Grind all the masalas, now mix everything properly along with the salt. Adjust the salt and red chilly powder as per the colour and taste.
  5. Now pour it in a jar and keep it at a place where it gets heat.
  6. Enjoy with rotis and rice
