Maharashtrian Authentic Rice

Ingredients Serving: 4

  1. Rice 150 gms
  2. Onion 1 whole chopped
  3. Cauliflower big chunks 1/2 cup
  4. Potatoes, raw peeled and cubed 1/2 cup
  5. French beans chopped 1/2 cup
  6. Carrot chopped 1/2 cup
  7. Green peas 1/4 cup
  8. Whole masala ( 1 star seed, 4 cloves, 2 peppercorns, coriander seeds 2tsp, cumin seeds 1tsp)
  9. Bay leaf 1 or 2
  10. 6 curry leaves
  11. 12 cashew halves
  12. 1/2 cup milk
  13. 2 tsp raw peanuts
  14. Salt 1 1/2 tsp
  15. chilly powder 1 tsp
  16. turmeric powder - 1 tsp
  17. Oil 2 tsp
  18. Ginger 1 inch, 3 garlic pearls, 1 green chilly
  19. Fresh coriander chopped 1cup
  20. Fresh grated coconut 1/2 cup
  21. 2 tsp ghee

Instructions

  1. Roast dry masalas, cloves, star seed, peppercorns,coriander seeds, cumin seeds
  2. Grind the roasted masala coarsely.
  3. Now heat 2 tsp oil in a pan.
  4. Add cumin seeds 1tsp, bay leaf, curry leaves, after they crackle add chopped onions. Fry onions till they turn pink.
  5. Add all the chopped veggies. Fry them open till 8 minutes.
  6. Add the rice and fry for another 2 minutes.
  7. Add turmeric, salt, ginger garlic paste, chilly powder and fry for one more minute. Add cashew halfs, peanuts, and fry for a minute.
  8. Then add 3 cups of water and stir everything nicely and close the pan with a lid. And put the gas on sim.
  9. Do not open frequently.
  10. Add the remaining masala, after 10 minutes. add 1/2cup milk, drizzle 2 tsp ghee, and mix everything nicely again.
  11. Now close the lid and let it simmer for 10 minutes.
  12. Your masalebhaat should be ready by now. If not add a little more water and let it cook till done.
  13. Garnish with chopped fresh coriander and freshly grated coconut. Serve hot with a drizzle of ghee on each of the serving plates.
