ABOUT Thekua RECIPE

A special fried sweet that is offered to the deity during the auspicious chhatt festival. This is a four day festival worshiping the sun god.

Ingredients Serving: 6

  1. Wheat flour- 2 cup (300 grams)
  2. Jaggery - 3/4 cup (150 grams)
  3. 1/2 cup water
  4. Coconut - 1/2 cup (50 grams) grated
  5. Oil- to deep fry the thekuas
  6. Green cardamoms- 5
  7. Ghee - 2 tbsp (for kneading the dough)
  8. Cashews, Raisins, Dried dates or any other Dry fruit- a handful ( any dry fruits can be added while making the thekua.)

Instructions

  1. Mix the jaggery in 1/2 cup of water and boil it to make a syrup. Then strain it to remove any impurities.
  2. Take the atta in a bowl. Add in the green cardamom powder, then add the ghee and chopped dry fruits of your choice. Knead it well with the jaggery syrup.
  3. Heat oil in a wok. Make small balls from the dough and give it a desired flattened shape. (You may use various design moulds available to flatten them.)
  4. Fry these thekuas in batches on a medium to low heat till they are golden brown and crisp. Then drain them on an absorbent kitchen towel.
  5. Serve it hot or cold. It can also be stored in an air tight container for a few days.
