ABOUT Badusha RECIPE

Badusha a famous South Indian sweet made of flour and ghee, fried in oil or ghee and dipped in sugar syrup.

Ingredients Serving: 4

  1. Maida 1 1/2 cup
  2. Butter 1/4 cup
  3. Curd 3 tsp
  4. Baking Soda 2 pinches
  5. Water as required for kneading the dough
  6. Oil 2 cups
  7. For Sugar Syrup:
  8. sugar 1 cup
  9. Water 2 cups
  10. Cardamom Powder 1/4 tsp
  11. Saffron strands 2 (this is optional)

Instructions

  1. In a mixing bowl add the melted butter, curd, baking soda and mix well.
  2. Add the flour, mix and crumble well using your hand.
  3. Now add water little by little to form a soft dough. Knead the dough well for 5-10 mins.
  4. Take small portion of the dough and make lemon sized balls and keep aside for 5-10 mins.
  5. Now shape the badushas like a dougnut by pressing the balls and make a dent with your thumb in the middle. The badushas should be smooth and there should not be cracks or else it will crack and will start to break while frying.
  6. To make sugar syrup: In a pan add sugar and water and bring to boil.
  7. When the sugar syrups forms to a single string consistency add saffron strands and cardamom powder. Keep aside warm. You can make this simultaneously while frying the badushas.
  8. Frying the Badushas: Heat oil in a frying pan. When the oil is hot switch off the flame, wait for a min or two then add the badushas in batches.
  9. Let the badushas fry in the preheated oil. When the shh sounds stops and the bubbles disappear switch on the flame and fry further on medium low flame until golden brown. Please do not fry in high flame or else it will be uncooked inside.
  10. Remove and drain it in absorbent paper.
  11. Add the badushas in the sugar syrup immediately. Dip them well on both sides, keep immersed for about 5 mins then transfer it to a tray or plate.
