ABOUT Balushahi/ Badusha RECIPE

This is my favourite sweet. Popularly called Balushahi in North India and Badusha in South India. It is a deep fried dough topped with sugar syrup. Melts in the mouth!

Ingredients Serving: 6

  1. 1 cup maida/ APF
  2. 1/4 tsp cardamom (elaichi) powder
  3. 1 tbsp curd
  4. 1 pinch soda bi carb
  5. 3 tbsp ghee
  6. Water as required to make dough
  7. Oil/ ghee for deep frying
  8. 1 cup sugar(for syrup)
  9. 1/2 cup water(for syrup)
  10. Chopped pistachios and kesar for garnish
  11. Chopped almonds for garnish

Instructions

  1. Take maida, elaichi powder, curd, soda, ghee in a bowl. Add water as required to make a soft dough. Do not knead too much. Keep aside for 15-20 minutes
  2. Heat ghee/ oil for deep frying. Make lemon size balls and make a thumb impression in the middle of it
  3. Deep fry these balls on very slow flame. This may take about 20-25 minutes to properly fry on all sides
  4. If the heat is more, switch off the flame for 2-3 minutes .
  5. When the balushahi are golden brown from all sides remove on a kitchen towel and keep aside for 5 minutes.
  6. Dip the fried balushahi in warm sugar syrup for 5 minutes. Strain and arrange on a plate. Garnish with chopped pistachios , almonds and kesar threads. Serve after at least 1 hour.
  7. For sugar syrup: Mix sugar and water in a pan and keep stirring till sugar dissolves. Let it boil to get a 1 1/2 string consistency.
