I am eating only black until I make/taste something delectable than this ! Kala jamoon , is the not so popular clan of the royale Gulab jamoon. Unlike Gulab jamoon this dessert has always been let down by many. The irony is , Kala jamoon tastes as delicious as Gulab jamoon does. So its time to go Black ! The process is very similar to gulab jamoons except for, it has a green center and is fried for long. Kala jamoon is a no fuss , simple and easy to make ahead dessert that your entire family will enjoy!

Ingredients Serving: 10

  1. For the outer layer : 1.5 cups : Full fat Milk powder ( i used Nido)
  2. 3 tbsp : All purpose flour
  3. A pinch : Baking soda
  4. A pinch : salt
  5. 2 tsp : Melted butter / ghee
  6. 2 tbsp : Yoghurt
  7. Oil for Deep frying
  8. For the Green center : 3/4 cup : Full fat Milk powder ( i used Nido)
  9. 1 tbsp : All purpose flour
  10. 1 tsp : Melted butter / ghee
  11. 1 tbsp : Yoghurt
  12. Pinch or few drops : Green food color
  13. 1 tbsp : Crushed pistachios
  14. For sugar syrup : 1.5 cups : Sugar
  15. 2 cups : Water
  16. Few strands Saffron
  17. 1 tsp : Cardamom powder

Instructions

  1. In a bowl add in flour, milk powder, salt, baking soda, ghee and curd mentioned in the outer layer list.
  2. knead them to a soft sticky dough. Adding more curd if required. Now cover and let the dough rest for 5 mins while you prep up with the green center.
  3. In another bowl add in the ingredients mentioned in green center list and knead them to a soft dough . Keep this covered and let the dough rest for 5 mins.
  4. After five minutes uncover the dough(both white and green) and divide each dough into 24 portions. Roll them into smooth balls.
  5. Green ones will be half the size of white ones.
  6. Meanwhile start off with the sugar syrup,Take sugar and water in a sauce pan, bring it to boil. Simmer it for 5 to 8 mins till it gets little sticky. No need of string consistency.
  7. Now add in cardamom powder, saffron and mix well. Keep the syrup covered until required.
  8. Start shaping the jamoon now. Take a white dough ball and pat it into oval shape.Place a green dough oval log in the center of the white one and re shape it to a oval jamoon.
  9. Repeat the process and shape every jamoon in the same manner.I made few rounds and a few oval shaped ones.
  10. Once the oil is slightly hot add the jamoon one by one and fry on low to medium heat until dark in color.
  11. Fry the shaped jamoon adding four to five of them at a time and do not over crowd. Once they turn dark , drain and add them to the warm syrup.
  12. Let the jamoon soak for couple of hours in the syrup and later serve them warm or cold. Yummy yummy Kala jamoon are ready to hog on !
  13. Man! These look so gooooddd cannot stop admiring,Phew my effort paid off !
  14. Simple,tasty yet done in no time ! Wah .what a package :)
