ABOUT Arbi Tikka Masala RECIPE

It is a very delicious sabji by giving a new look to arbi , the process of making this is like our favourite paneer tikka.

Ingredients Serving: 6

  1. 500 gms arbi
  2. For Marination-
  3. 4 tbsp hung curd
  4. 1 tbsp kasoori methi
  5. 2 tbsp Oil
  6. 1 tsp red chilly powder
  7. 1 tbsp dhania powder
  8. 1 tbsp green chillies ginger paste
  9. Sendha Namak as per taste
  10. For gravy-
  11. 5 freshly pureed tomatoes
  12. 1 tbsp green chillies ginger paste
  13. 1 tsp red chilly powder
  14. 1 tsp dhania powder
  15. 1 tbsp oil
  16. 1 tsp jeera
  17. 4 cloves
  18. 2 small cinnamon stick
  19. 1 1/2 tbsp cashews and melon seeds paste , it is prepared by soaking them for half an hour and then grind into a fine paste
  20. 2 - 3 tbsp malai
  21. Sendha Namak as per taste
  22. Some milk or water to adjust the consistency of the gravy

Instructions

  1. Boil arbi and let it cool down.
  2. When it cools down then peel them and press each arbi in between your palm , gently.
  3. In a mixing bowl put all the marination ingredients and mix nicely into a smooth paste.
  4. Put all the arbi pieces in the marinate and mix well with your hands , so that it coats the arbi nicely.
  5. Cover the bowl and keep for 2- 3 hours for marination.
  6. Put it in the fridge, as it will become very sour outside.
  7. After 2 - 3 hours take out the arbi from the fridge , arrange the arbi in an oven proof flat bottomed bowl or plate.
  8. Place this bowl in the microwave oven and micro for 5 - 6 minutes , this is to take out the extra moisture from the arbi , do not micro at one go , cook it for 2 , 2 minutes.
  9. You can also bake them in an oven for 10 minutes or can roast them in a non stick pan.
  10. FOR MAKING THE GRAVY:-
  11. Heat oil in a pan and put jeera , cloves and cinnamon , let splutter.
  12. Then add green chillies ginger paste.
  13. Saute for a while , then add red chilly powder , dhania powder .
  14. Saute , then add freshly pureed tomatoes .
  15. Let it cook , on low heat , until the oil comes out .
  16. Then add cashews and melon seeds paste .
  17. Cook for 4 - 5 minutes , stirring occasionally .
  18. Now add malai and mix well .
  19. Now add the arbi in the masala and mix well .
  20. Now add some milk or water to adjust the consistency.
  21. Now add salt and mix gently , cook for 4 - 5 minutes more .
  22. It is ready to serve.
  23. You can have this kuttu ki pooris , rotis , rajgir ki pooris , kuttu ke chille .
