Ingredients Serving: 4
Arbi/kochu/Taro 1/2 kg
Fenugreek seeds half teaspoon
Salt half teaspoon
Water for boiling
Powder spices for tandoori masala Arbi-
Turmeric powder half teaspoon
Chilli powder half teaspoon
Chat masala 1 teaspoon
Cuminpowder half teaspoon
Tandoori Masala 1 tablespoon
Other ingredients-
Green chillies 2 to 3 numbers
Oil 2 tbsp
Butter 2 tbsp
Asafoetida 2 pinch
Ginger garlic paste one teaspoon
Salt to taste
Ingredients for curd and chickpea batter
Red chilli powder half teaspoon
Turmeric powder one fourth teaspoon
Salt to taste
Curd 1 cup
Chickpea flour/ besan 3 tablespoon
Finely chopped Coriander leaves
Ingredients for Tadka-
Oil/ghee 1 teaspoon
Pinch of Hing/ asafoetida
Small Mustard seeds one teaspoon
Whole dry Red Chillies two numbers
Instructions
Rins Arbi(Taro/Colocosia)under running water thoroughly
Take a cooker place in Arbi ,1/2tsp fenugreak seeds, 1/2tsp salt then add enough water to boil Arbi
Boil until 2 to 3 whistles comes up in high to medium flame
Let the steam settle down on its own,open the lid and takeout all the Arbi with the help of spoon.
Dip Arbi in normal water for further cooling ,after 10 minutes take out and peel out the skin with the help of fingers.
Cut them horizontally into 2 if they r big in size
Heat oil and Butter in a kadai add in 2 pinch asafoetida...
Add in all the boiled Arbi and fry on high to medium flame for 4 to 5 minutes
Now add in 1 tsp ginger garlic paste, 1/2tsp turmeric powder, 1/2tsp red chilli powder Salt to taste 2 to 3 green chillies cut into two pieces...1/2tsp cumin powder
Add in 1tbsp tandoori masala powder ,1/2tsp chaat masala fry for 4 to 5 mins
Tandoori masala Arbi pan fry is ready
Take a deep bowl add in 1 cup chilled curd ,3 tbsp chickpea flour, salt to taste, 1/2tsp turmeric powder 1/2tsp red chilli powder and whisk nicely
now add 1 cup water to it and again whisk nicely with a whisker
Now add curd and chick pea flour mixture over pan fried Tandoori masala arbi
Cook on medium flame for 5 to 6 minutes switch off the flame.
Take a small Pan add in 1 tsp ghee, let it smoky hot switch off the flame add in 1 tsp mustard seeds ,2 whole red chilli allow it to splutter
Pour this ready tadka over ready Tandoori Masala Arbi Kadhi
garnish with coriander leaves Serve hot with rice and butternaan or chapati
