Ingredients Serving: 6

  1. Carrot 5 to 6 grated
  2. Fresh Coconut 1
  3. Apple 2 grated
  4. Coconut Milk 2 cup
  5. Sugar 2 cup
  6. Pure ghee 150 gms
  7. Almonds and Cashew powder 5 to 6 tsp
  8. Almond, Raisin and cherry for garnish
  9. A pinch of cardamom powder

Instructions

  1. First of all remove the brown part of fresh coconut and fine grate the white part.
  2. Put grated coconut mixture in the pressure cooker with 1 cup coconut milk and cook it for 3 to 4 whistles.
  3. Add grated apple and carrot in the pressure cooker with another 1 cup of coconut milk. Cook it for 4 to 5 whistles.
  4. Put all this mixture in a wok and cook on a medium flame until all liquid has reduced, this will take about 10 to 15 minutes.
  5. Add ghee and desiccated coconut. Mix well, cook on a low flame. Add khoya and then add sugar, continue cooking for 5 more minutes.
  6. Add cashew and almond powder, pinch of cardamom powder, mix well. Mixture will be thick and it will leave the edges of the pan.
  7. Grease the flower shape mould and put in this mixture, freeze it for 15 minutes to set.
  8. Carrot Coconut Apple Flower is ready, garnish with some chopped almonds, raisin and cherry.
