Ingredients Serving: 4

  1. Maida 1/2 cup
  2. Apple 1 small peeled and chopped
  3. Carrot 1 small peeled and chopped
  4. Baking powder 1/4 tsp
  5. Baking Soda 2 pinches
  6. Sugar 50 grams
  7. Butter 50 grams room temperature
  8. Vanilla Essence 1/4 tsp
  9. Milk 30 ml

Instructions

  1. Take the chopped Apple and carrot in a blender and blend them coarsely.
  2. Grease the muffins cups with butter and set aside.
  3. Take the butter and sugar and stir well till the butter and sugar melts completely.
  4. Add the vanilla essence and the coarsely grounded apple carrot and mix well.
  5. Seive the flour, baking powder and baking soda.
  6. Add them over the wet ingredients and gently fold it and make a smooth batter without lumps.
  7. Pour the batter over the greased cups till half full.
  8. Microwave on high power for 2 mins. Start checking from 1 and half mins as the temperature of the microwave varies from one another.
  9. Remove from the microwave, let it cool dowm completely, unmould and serve.
