Cut Cut the paneer in square cubes. Cut the onions and capsicum also in square pieces.
Making of Gram Flour Paste Heat Musturd oil in the pan add gram flour and road till becomes golden brown. After 5 mins roasting add some water and mix it well make smooth paste and switch off the flame.
Making White Colour Marination In a large bowl, take 2 spoons of hung curd (yoghurt) 2 big spoons ginger-garlic paste, 1tsp Salt, (as per your taste) Black pepper (½ teaspoon) and whisk it lightly to make smooth paste. Add one portion of veggies and paneer to this marinade. Mix all well gently. Check the taste and add more salt/seasonings as per taste. Take out white marination in different bowl and keep aside.
Making of Saffron Colour Marination In the same old bowl, Add Hung curd (yoghurt) 2 big spoons Gram Flour paste, 2 spoons Ginger-garlic paste, 1 tsp Salt, (as per your taste) Turmeric, ½ tsp Mustard Oil, 3 spoons Tandoori Masala (any), (1-2 spoons) Red Chilli Powder (Use Degi Mirch for colour), 1 spoon and whisk all till it becomes smooth. Add second portion of veggies and paneer to the marinade. Slowly and gently mix them all. Now transfer this to the another bowl and keep aside.
Making of Green Colour Marination Now again in the previous bowl, Add- Hung curd (yoghurt) 2 big spoons Ginger-garlic paste, Salt, (as per your taste) Tandoori Masala (any), (1-2 spoons) Black Salt (½ tsp) Red Chilli Powder 1 spoon and whisk it lightly till it becomes smooth. Add previously made green paste in marinade. Add third portion of veggies and paneer to the marinade. Slowly and gently mix them with the marinade masala mixture. Now again transfer this green colour marination to the other bowl and keep aside.
Cover all three colour marination for at least 1-2 hours or overnight in the refrigerator for best taste. After 2 hours, pierce the paneer cubes and veggies alternately on bamboo sticks by putting one color paneer and veggies on one stick. Oil the bamboo skewers before piercing. Prepare three different color bamboo sticks and arrange them to form tricolor of indian flag.
Grilling Paneer Tikka Now place the bamboo sticks on BBQ grill so that they represent the Indian flag.Put on medium flame and allow them to grill well until the get cooked completely. Place a hot coal and pour oil so that smoke comes out of it.
Place this smoking coal in container where we stored the cooked paneer tikka sticks for 1 minute to give Smokey flavour.
Serve hot along with coriander chutney and tricolour salad made using carrot radish and cucumber/chillies.
For making of green chutney and green paste for green colour marination : First grind mint, coriander and spring onions and make paste for green chutney. Add black salt, common salt and lemon in this chutney. Take half part of this mint coriander chutney and add spinach leaves and grind again to make green paste to be used for green colour marination.
