ABOUT Kalonji Rice RECIPE

Kalonji is a well-known spice of North and that gives a nice aroma to the dishes. It is perfect for health and possesses many medicinal properties too. Usually Kalonji is used is Parathas and Curries as flavonoid. So I thought to use Kalonji as Star of my Rice dish. Simple, easy and yet full of flavours.

Ingredients Serving: 4

  1. 2 cups basmati rice
  2. 2 tbsp Kalonji seeds
  3. ¾ tbsp. Cumin seeds
  4. 2 Bay leaves
  5. 1 cup onions
  6. 3 - 4 green chilies
  7. 1 tbsp oil
  8. Rock salt
  9. Water to boil the rice

Instructions

  1. Wash the rice well, drain it and keep aside for 5 to 15 minutes.
  2. Heat water in a deep vessel and add to it rock salt and bay leaves. Add excess salt in the water, only then the rice can absorb salt and not to worry as we will drain off the water.
  3. When the water boils, add in the washed rice. The rice should be cooked upto 80% to 90% only. Drain the water and uncover the lid allowing the rice to cool down.
  4. Heat oil in a non-stick heavy bottom pan. Add in the cumin seeds, when it starts to splutter, add in the Kalonji seeds and chopped onions and slit green chilies and stir well.
  5. When the onions become translucent, low the flame and spread in the cooking rice and gently toss until the rice is coated with spices. Cover the pan and allow it be on sim for another 5 minutes. Tada a supper yummy Rice is ready to serve.
